Cooking Method: Braise

Ingredients





450g soaked sea cucumber, rinsed and sliced thickly





1 thumb-size old ginger, smashed





1/2 tbsp Chinese rice wine





500g chicken drumsticks, cut into bite-size pieces





8 鈥?10 dried mushrooms, soaked to soften








Seasoning for chicken:





1/2 tbsp light soy sauce





1/4 tsp pepper





2 tbsp oil





4 slices ginger, shredded





1 tsp chopped garlic





1 tsp chopped shallots





Thickening:





1陆 tsp cornflour mixed with 1 tbsp water





For sauce (combine):





2 cups chicken stock





1 tbsp light soy sauce





1 tbsp thick soy sauce





1 tbsp oyster sauce





1/2 tsp salt





3/4 tsp sugar





1/4 tsp pepper





1 tsp chicken stock granules


Method


Marinate chicken pieces with light soy sauce and pepper and leave aside for 20 鈥?25 minutes.





Place sea cucumber and ginger in a non-stick saucepan and stir-fry without oil until almost dry. Add in the rice wine and stir-fry briskly for one to two minutes. Remove the sea cucumber from the saucepan and set aside.





Heat oil until hot and fry shallots and garlic until lightly golden. Add ginger and fry until fragrant.





Add in chicken and mushrooms and stir-fry for two to three minutes. Pour in sauce ingredients and add the sea cucumber. Bring to a boil. Cover and cook over a low heat for 40鈥?5 minutes or until sea cucumber is cooked and tender. Thicken with corn flour mixture.|||Although the recipe above sounds great I would reference the website below before cooking something your not familiar with!!

2 lbs Sea Cucumber, soaked


5 Green Onion


5 slices Ginger


6 tablespoons Soy Sauce


2 tablespoons Wine


6 tablespoons Oil

1 tablespoon Cornstarch, mix with 1 tablespoon cold water


3 1/2 cups Soup Stock


1/2 tablespoon Sesame Oil





Method :


Clean the soaked sea cucumber, cook with 1 green onion, 3 slices ginger, 1 tablespoon wine and 5 cups of cold water about 20 minutes over low heat.





Discard the water, ginger and onion. To the sea cucumber, add 3 cups soup stock and cook for 10 minutes over low heat again.





Remove and discard stock. Slice each sea cucumber into 4 or 6 larges pieces. Heat 2 tablespoons oil and fry sea cucumber. Add 2 tablespoons soy sauce and cook about 1 minute. Remove and discard the sauce.





Heat 4 tablespoons oil in frying pan, fry 3 green onion, 2 slices ginger and then add sea cucumber. Splash 1 tablespoon wine and 4 tablespoons soy sauce, 1/2 teaspoon sugar and 1/2 cup soup stock, cook for about 3 minutes.





Thicken with cornstarch paste, add sesame oil.

I watched a local TV programme, Step Forward, hosted by Dylan, where the Malay fisherman just picked up the sea cucumber, sliced it into two and ate it raw. He claimed it is very nutritious and delicious.


Besides cooking it in soups, it can also be cooked as a dish.


Cut the sea cucumber slantwise about 5mm thick.


Cut some carrots and bamboo shoot leaves, lengthwise too.


Button mushrooms, straw mushrooms, prawns, any meat you want and garlic.


Saute garlic and add in meat and prawns...stirfry.


Add in the carrots, bamboo shoot leaves, mushrooms, and sea cucumber.


Stirfry over medium heat for a few minutes....not too long.


Add some water and stir.


Add salt, pepper, oyster sauce....stir again.


Add in tapioca or corn flour diluted with some water first.


Stir again and serve.


I cook without measurements, just by vision and taste but I am sure you know how much to put into the wok :~)

I have never hear of a toxin but I have heard that under moderate amounts of stress, a sea cucumber will squirt water from both ends. Under extreme stress, however, the sea cucumber will regurgitate its stomach called evisceration and escape in the subsequent chaos. The stomach will regrow within a relatively brief period of time.





Also they have a compound in their skin called catch collagen - this tissue is under neurological control and is capable of changing from a 'liquid' to a 'solid' form very quickly. The ability of the catch collagen to change from liquid to solid form at will is how sea cucumbers manage to get themselves into such tiny holes in the live rock structure - they are able to 鈥榞oopify鈥?their bodies and literally pour themselves into the hole they have chosen, and then solidify their skin to prevent anything from being able to remove them.





The final and most drastic response possible is when a stressed cuke expels its Cuvierian tubules. These tubules are a series of long, spaghetti-like tubes which are associated with the hind gut of certain sea cucumbers, and are thought to be primarily defensive in function.

|||Do you even have a salt water tank that's cycled? If not... all those fish are going to die in that tank. It takes WEEKS to cycle a salt water tank or any tank for that matter. I have Reason to believe that you don't have a cycled marine tank because you're asking about the best brand of salt.You need to research these things BEFORE purchasing fish or anything else.|||"Cheap" and "best" are two terms that seldom apply to the same product.


For salt mix (which you mix with water to make artificial sea water), I recommend Instant Ocean or Reef Crystals. Another good one is made by SeaChem-- I don't remember the product name.





Starfishes and sea cucumbers live in salt water (only), but they are not fish. They belong to a class of invertebrates called echinoderms.





Please don't buy any more fish or sea animals without even having water to put them in. 12 marine fish for a 30-gallon tank is far too many, and they will surely die before long. In Canada here, we have the option of buying it soaked in water (meaning, fresh) or frozen in the freezer aisle. You can find them in most (if not all) Asian Supermarkets.





You may want to make it into a soup, just to get the real taste of the item. Try making it with Chicken broth and Shitaki (Asian) mushrooms. If you like, you can also add in some pre-soaked dried preserved mini shrimps (these are really flavourful). This is a cucumber which isn't supposed to do this. Could it be another kind mistaken for the light spotted. It looks just like the Holothuria hilla (light-spotted). Now, which part should I keep in my salt water tank? I know that a part is very toxic. A marine animal named for its cucumber-like shape, with short tentacles at one end. Not readily available fresh in the United States, but available dried in Asian markets. Dried sea cucumber must be soaked in water a minimum of 24 hours, and will double in size and take on a gelatinous quality. It's rather rubbery and is most often used in soups.

Recipe: The Eight Immortals Crossing the Sea Gambolling Around the Arhat





Ingredients:





1. Cooked Chicken breast 300g


2. Soaked shark fin 100g


3. Sea cucumber 100g


4. Abalone 100g


5. Fishbone 100g*


6. Fish maw 100g**


7. Shrimp 100g


8. Ham 100g


9. Asparagus 50g


10. Fish meat (white fish, preferably Chinese white croaker) 250g


11. Cooking wine 50g


12. Some chicken broth, some ginger, leaves of greens, and some cooked lard.





Directions:


Note: The ingredients must be laid out separately in a pot or dish in eight sections. The chicken representing Arhat is placed in the center, and covered with slices of ham, ginger, and greens).





1. Mince half (150 g) of the chicken breast into a fine paste. Use part of the paste to lay out on the bottom of a pot or dish to form Arhat's cushion. Cut the rest of the chicken into bars.


2. Cut the white fish into bars and sandwich the fishbone in each.


3. Arrange the shrimps in a ring.


4. Form the shape of chrysanthemum with the shark fin and the chicken paste.


5. Shape the sea cucumbers like butterflies.


6. Pick out eight pieces of asparagus.


7. Arrange all the ingredients in the pot as described above.


7. Season the materials above with salt, MSG (if desired), and Shao Xing Chew (a cooking wine) and steam.


8. Pour hot chicken broth and hot lard over the ingredients and serve hot.





*Fish bone is a kind of fish glue abstracted from fishbones and scales of sharks or croakers by braising. In fact, it is a clear jelly.


** Fish maw is the air-bladder of certain types of fish. It must be soaked in water before being cooked.

Just recently got a sea cucumber and it dropped a portion?

The back end of my sea cucumber lost a portion, which still has a patch of skin on it, but is mostly white. The back end is deflated, so it wasn't a clean separation, more like a zit that got popped and the guts of the zit came out in a ball, you know?





My question is whether this is normal (I'm not sure how sea cucumbers reproduce, so maybe it's splitting off or dropping an egg sac), or if this is a bad sign?|||rhys is correct.


It will shoot out those long white strings as a defense..they can sting a little on some people when it hits their skin (I can feel it - kinda like a bristle work feel, doesn't bother my husband)





If it does it all the time, it is distressed and it can be a bad thing, but if it only happens in handling, no trouble.|||oh its normal when a cucumber gets scared it throws up its insides its a defense mechanism

Anyway, if you ever come across one, do not step on it because it has the habit of emitting a white sticky substance, like semen, that is much more difficult to take off you. Possibly that is where the nickname comes from, apart from the shape.


Furthermore, is considered to be very good bait,once cut off in small pieces, in use for paragadi.|||The cucumber is called in Greek "olothourio"

Sea Cucumber?

I went to a fish store and bought an anemone that was attached to live rock so I got the live rock for free, I put it in my tank and the next day I saw a worm like thing come out of the live rock it look like it had little spikes and was kinda pinkish but got a little more blue at the end, we thought it might be a sea cucumber but it seemed to fast to be one so were not sure what it is, any ideas?|||That's a bristle worm. They eat the ditrius. People will try to tell you they are dangerous, but the truth is only one kind stings you and its very rare to get one.
